LEARN MORE

Our Story

Selvedge Brewing is a Virginia craft brewery focused on unique small-batch, culinary-inspired beers. Simply, these are beers crafted to be paired with food. And food that is best with beer. Named for the original wool fabrics produced when the mill was a mill, Selvedge beers range from New-England-style IPAs to pastry stouts - and everything in between.

Watch for new beer releases in the coming weeks.

Our Story Our Food

Our Food

The Wool Factory Executive Chef Tucker Yoder offers a menu of casual eats: the ultimate bar food, elevated with locally sourced ingredients. Consider local mushroom tacos, wings from River Oak Farm, and a smashburger - with crinkle-cut fries, of course!

Current Beers

Linen

Kölsch

Our Linen kölsch is as crisp and welcome as a cool breeze on a hot Summer evening. Malt-wise German Pilsner malt is the star, lending a honey-like malt sweetness and slight crackery notes. With a subtle aroma reminiscent of pears and a slight floral and spicy aroma from a due of German hops (Tettnanger and Spalter Select), this top-fermented ale will transport you to the streets of Cologne wearing a crisp linen jacket.

Poplin

Italian Style Pilsner

Say hello to our little friend, Poplin, an Italian-style pilsner. A snappy dresser with bitterness to match, this pilsner has a honey sweetness from the German pilsner malt and a slight cracker-like flavor from the biscuit malt. What makes this pils Italian (despite being born in the USA)? Answer: The crispness that comes from the addition of Hallertau Mittelfrüh, Mandarina Bavaria, and Spalter Select hops during the whirlpool and as a dry hop.

  • IBU: 38

Seersucker

Gose

Just like its namesake fabric that is perfect for hot summer days, this traditional Leipzig-style Gose is a refreshing reprieve from the hot Virginia weather. Brewed with pilsner malt, malted wheat, sea salt and coriander, our Gose is sour, yet balanced with a breadiness on the finish and a touch of salt.

Infi-Knit Trail

Session IPA

We love being located next to the amazing Rivanna Trail and set out to brew a beer that would complement a day of hiking or biking around the loop. We crafted a low-abv session IPA that is not only a crusher but full of tropical flavors and super refreshing. Plus, 10% of proceeds from Infi-Knit Trail will be donated to support the work of The Rivanna Trails Foundation in building and maintaining public greenways that connect our community to nature. Brewer's Note: Infi-Knit Trail is a flavorful knock-out thanks to the Mosaic & El Dorado hops, Murphy & Rude English Pale and Biscuit malt, and a very unique combination of ‘Cosmic Punch’ bio-transformative yeast and ‘Phantasm’ (read as “magic!“). This innovative combination of yeast and Phantasm work together to create thiols—which are strong aroma compounds that evoke grapefruit, passion fruit and guava.

Britches Get Stitches

West Coast IPA

What do you do when your favorite selvedge denim gets ripped? Britches Get Stitches. [pause for laughter] This classic West Coast IPA has a clean, crisp, malt backbone that allows Idaho Gem, Columbus, and Mosaic hops to shine. Subtle grapefruit and mango flavors balance nicely with dank and piney notes making for a super crushable IPA.

  • ABV: 6.6%
  • IBU: 58

Herringbone

New England IPA

Dress it up or dress it down – Herringbone is a classic fabric for a reason. Our New England style single IPA is a solid go-to IPA that hits all the notes we want in a hoppy beer. We added Hull Melon, Azacca and Citra hops both during the whirlpool stage, as well as a single dry hop.

  • ABV: 6.5%
  • IBU: 38

Tracht

Festbier

Crafted in the style of a traditional German Oktoberfest celebratory brew, Tracht (which means traditional dress in German, think lederhosen! – and is pronounced like the ‘Okt’ in Oktoberfest) has notes of toasted bread and Bavarian pretzel, with a subtle sweetness from a combination of Barke Munich, Barke Pilsner, and Carafoam malts. A smidge of bitterness from Perle and Hallertau Mittelfruh hops. The combination gives a malty flavor that is not overly sweet with a subtle floral hop aroma. This is a beer that is built to be enjoyed freely by the discerning merrymaker.

Fleece — Served on Nitro

Coffee Milk Stout

What’s more cozy than being wrapped up in a fleece blanket next to a roaring fire, sipping on your favorite Grit Coffee? Answer: this coffee milk stout (duh). Featuring a variety of malts, including Chocolate Wheat and Milk Chocolate Malt from Murphy & Rude Malting Co. along with a heavy dose of Mexican Chiapas coffee from Grit Coffee, this stout is super smooth, slightly sweet, and balanced with a nutty and slightly bitter finish.

  • ABV: 4.5%
  • IBU: 20

Smoking Jacket

Barrel-Aged 'Velvet' Imperial Stout

How do you improve something that’s already great? Time. And bourbon. We let our Velvet Imperial Stout aged in Heaven Hill bourbon barrels for a year, which amped our already stellar Velvet up to 11. The charred white oak barrels, which were still saturated with bourbon, added the tiniest amount of heat and subtle notes of vanilla and medjool dates. This is the height of comfort, while still being classy AF.

  • ABV: 17.5%
